Dining
Cooked over pine
and sea salt
Four places to eat and drink, one kitchen garden and the boats in the cove below.
The kitchen
Our chef cooks what the sea and the garden give him that day, over the wood of the estate. Nothing travels further than the lighthouse road.
The boats land in the cove at eleven. By noon the fish is on the terrace grill and by seven it is on Salt's menu, cured, smoked or simply roasted.
The keeper's garden grows more than two hundred varieties. What isn't eaten is pickled, dried or fermented for winter.
